INGREDIENTS

4 teaspoons of olive oil
2 carrots cut in slices
1 celery stalk, diced
1 diced onion
4 garlic cloves, finely chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon of curry powder
1 pinch of ground cinnamon
1 pinch of hot pepper flakes
1 can of diced tomatoes (28 oz / 796 ml)
2 cups reduced-salt vegetable broth
2 cups of water
1 zucchini, diced
3 cups of young spinach leaves
1/4 cup fresh coriander, chopped (optional)
1 tablespoon of lemon juice
4 slices of baguette bread about 1/4 "(0.5 cm) thick
1/2 teaspoon of zaatar (see tip)
1/2 pack of Halloumi cheese cut into 4 slices (half a pack of 8 oz / 250 g)

PREPARATION

1. In a large saucepan, heat half of the oil over medium heat. Add carrots, celery and onion and cook, stirring, for 3 minutes or until vegetables have softened. Add garlic, cumin, coriander, curry, cinnamon and hot pepper flakes, and mix. Add tomatoes, broth and water and bring to a boil. Reduce heat and simmer for 10 minutes. Add the zucchini and cook for 2 minutes or until tender, but still crisp. Remove the pan from the heat. Add the spinach, coriander, if desired, and the lemon juice, and mix.

2. Meanwhile, spread slices of baguette bread on a baking sheet, brush with remaining oil and sprinkle with zaatar. Bake in preheated oven at 400 ° F (200 ° C) for 5 minutes or until croutons are lightly browned and crisp.

3. In the meantime, in a skillet, cook the slices of Halloumi cheese over medium heat for 4 minutes or until golden brown (return to halfway through cooking).

4. When serving, garnish each serving with a slice of cheese and a crouton.

Tip Boost

Zaatar is a blend of spices found in Middle Eastern grocery stores. You can also prepare it yourself by mixing 2 tbsp. to tab (30 ml) dried thyme, and 1 tsp. at tab (15 ml) each of sumac and sesame seeds. What to do with the rest? It is added to a marinade or mixed with plain Greek yogurt for a delicious dip.
